Mushroom Briyani | kalan briyani | how to make a Spicy Mushroom Briyani



  Mushroom Briyani


                  Mushroom briyani is a delicious food which can be served large gathering. Its very easy briyani dish. When i say briyani it makes mouth watery. The main Ingredients are rice, spices and the
mushroom. The rice should be long grained rice (basmathi or seeraga samba). Mostly it is served along with raita. I have given a step by step instructions below.

Ingredients

  • Basmathi Rice - 2cups 
  • Mushroom - 200 grams
  • Butter - 5 Table spoons (Not Tea Spoon)
  • Oil - 1 Table spoons
  • Cloves -8
  • Bay leaves - 2
  • Cinnamon - 1
  • Cardamom -5
  • Star anise - 2
  • Red Onion - 1 medium sized
  • Tomato - 2
  • Coriander leaf  - few
  • Mint leaf - few
  • Lemon / Lime - 1/2
  • Curd - 1/4 cup
  • Turmeric powder - 1/2 tsp
  • Coriander powder - 3 tsp
  • Chilly powder - 3/4 tsp
  • Garam masala - 3/4 tsp
  • Water - 2 cups (proportional to rice)


Method

  1. Wash the mushroom in water and chop it as desired.
  2. Wash the rice first and then soak the rice for only 30 minutes.
  3. Bring the butter to heat in a pressure cooker and add oil when the butter is melted. when it is hot enough add bay leaves, cardamoms, cloves, cinnamon and star anise pod.
  4. After ~30 seconds add the mushroom and add salt to it. Saute it for 10 minutes.
  5. Now add chopped onions and green chilly. Saute it for few minutes until onion becomes translucent.
  6. Add ginger garlic paste and fry until the raw smell goes off.
  7. Then add chopped tomatoes and cook to the pulp.
  8. Add coriander powder, chilly powder, gara masala to it and mix it properly.
  9. Now add curd. Stir it until it gets blended evenly.
  10. Add chopped mint and coriander leaves.
  11. Pour 2cups of water. It measures according to the measurement of rice.
  12. Add salt as required and mix it evenly. (This water should taste slightly saltier than the actual taste in final result)
  13. Add rice and lemon juice to it. Now close the pressure cooker. 
  14. Cook it in Medium heat until one whistle. Switch it off and then keep it in the same burner for 7 more minutes. Then keep it in different place.
  15. Wait until the pressure goes off. Now open the pressure cooker and transfer it to a wide vessel.
  16. Now tasty and yummy mushroom briyani is ready to serve.

Step by step instruction

  • Soak the rice for 30 minutes
                                      

                                           

  • Heat butter in a pressure cooker
                                           




  • Add the spices and fry it for a while
                                          


                                          

  • Add Mushrooms and fry it for 10 minutes until brown
                                          

  • Add onions and saute it until golden brown
                                         

  • Add tomatos
                                       

  • Add Coriander powder, chilly powder and garamasala
                                       

  • Add yogurt/curd and mix it
                                        


  • Add chopped mint and coriander leaves
                                          

  • Pour 2cups of water ( proportional to rice)
                                        

  • Add the soaked and drained rice
                                       

  • Squeeze half lemon to it
                                       

  • Pressure cook for 1 whistle
                                           

  • After the whistle switch off and keep it in the same burner for 7 minutes. Then keep it in another place.
  • Open after the pressure goes of. Briyani is ready to serve
