Chicken Briyani
Chicken briyani is a delicious food which is served in special occasions.The main Ingredients are rice, spices and the meat. The rice should be long grained rice (basmathi or seeraga samba). Mostly it is served
along with raita. I love having Chicken briyani. But I was not a big fan of briyani until I cooked it in my home. My husband love to have briyani and that made me to cook a delicious briyani. And now here is the recipe!

Ingredients
- Basmathi Rice - 3cups
- Chicken - 1 1/2 lbs
- Butter - 5 Table spoons (Not Tea Spoon)
- Oil - 5 Table spoons
- Cloves - 4
- Bay leaves - 2
- Cinnamon - 1
- Cardamom - 4
- Star anise - 2
- Red Onion - 2 medium sized
- Tomato - 2
- Coriander leaf - 1/2 cup
- Mint leaf - 1/2 cup
- Lemon / Lime - 1
- Curd - 1/4 cup
- Turmeric powder - 1/2 tsp
- Coriander powder - 2 tsp
- Chilly powder - 3/4 tsp
- Garam masala - 3/4 tsp
- Briyani masala - 4 tsp
- Water - 3 cups (proportional to rice)
Method
- Wash the chicken in water, drain it, add turmeric and keep it aside.
- Wash the rice first and then soak the rice for only 10 minutes.
- Bring the butter to heat in a pressure cooker and add oil when the butter is melted. when it is hot enough add bay leaves, cardamoms, cloves, cinnamon and star anise pod.
- After ~30 seconds add the chicken and add salt to it. Saute until chicken turns golden brown. This takes at least 10 to 12 minutes.
- Add the coriander and mint leaves now and give a stir.
- Now add chopped onions and green chilly. Saute it for few minutes until onion becomes translucent.
- Add ginger garlic paste and fry until the raw smell goes off.
- Then add chopped tomatoes and cook to the pulp.
- Add coriander powder, chilly powder, gara masala, briyani masala to it and mix it properly.
- Add chopped mint and coriander leaves. Saute it.
- Now add curd. Stir it until it gets blended evenly.
- Pour 3cups of water. It measures according to the measurement of rice.
- Add salt as required and mix it evenly. (This water should taste slightly saltier than the actual taste in final result)
- Add rice and lemon juice to it. Now close the pressure cooker.
- Cook it in Medium heat until one whistle. Switch it off and then keep it in the same burner for 7 more minutes. Then keep it in different place.
- Wait until the pressure goes off. Now open the pressure cooker and transfer it to a wide vessel.
- Now tasty and yummy chicken briyani is ready to serve.
